Salmon Shepherd’s Pie with Maine Mashed Potatoes

Ingredients:

  • 1 15 oz can salmon, bones and skin removed
  • 1 10 oz package peas in cream sauce (preferred) or plain
  • ¼ cup chopped celery
  • 1 4 oz can mushrooms, drained (optional)
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 2 cups mashed Maine potatoes
  • ¼ teaspoon onion powder
  • grated Parmesan cheese

Directions:

  1. Preheat oven to 350 degrees.
  2. Prepare frozen peas as directed on package.
  3. Drain and flake salmon. Combine salmon, celery, mushrooms, salt and pepper with cooked peas.
  4. Butter a 2-quart casserole and place salmon mixture in it.
  5. Stir onion powder into mashed potatoes and mix well; spread on top of salmon. Sprinkle Parmesan cheese on top and bake for 20 minutes or until potatoes are lightly brown.
