Italian Maine Potato Bites


  • 1 pound small Yukon gold potatoes, unpeeled, quartered or cut into bite size pieces
  • olive oil
  • salt and pepper
  • ¼ cup grated pecorino cheese
  • 2 teaspoons chopped rosemary
  • 1 teaspoon lemon zest


  1. Preheat oven to 425 degrees.
  2. Toss potatoes with olive oil and place on baking sheet. Season with salt and pepper and roast for 30 minutes. 
  3. Combine cheese, rosemary and lemon zest and toss with potatoes. 
  4. Roast for an additional 10 minutes.
