Italian Maine Potato Bites
- 1 pound small Yukon gold potatoes, unpeeled, quartered or cut into bite size pieces
- olive oil
- salt and pepper
- ¼ cup grated pecorino cheese
- 2 teaspoons chopped rosemary
- 1 teaspoon lemon zest
- Preheat oven to 425 degrees.
- Toss potatoes with olive oil and place on baking sheet. Season with salt and pepper and roast for 30 minutes.
- Combine cheese, rosemary and lemon zest and toss with potatoes.
- Roast for an additional 10 minutes.
