Moist Mashed Maine Potato Stuffing


1 lb. sausage meat (can use ground beef if you prefer)
¼ cup butter
½ cup chopped onions
1 cup celery, with leaves, chopped
½ teaspoon salt
¼ teaspoon pepper
1 tablespoon Bell’s poultry seasoning
2 cups or more of boiled, mashed Maine potatoes (do not add butter or milk)


  1. Melt butter in frying pan and sauté onion and celery until tender. 
  2. Add meat and stir until meat is slightly browned. 
  3. Add remaining ingredients and cook on low heat for about 15 minutes. (Add more salt and pepper if necessary. Add more potatoes if stuffing is too loose.
  4. Bake at 350 degrees for 30 minutes or until heated through, basting with drippings.
