Smashed Maine Potatoes
6 medium red Maine potatoes
1 onion, chopped
¼ cup dried chives, or ½ cup fresh, chopped
2 tablespoons onion powder
2 tablespoons garlic powder
1 stick butter or margarine
¼ to ½ cup milk
Salt and pepper to taste
- Wash potatoes well. Do not peel.
- Cut into quarters and boil potatoes and onion until done; drain.
- Add remaining ingredients and mash with a hand masher. Do not whip. Potatoes should be somewhat lumpy.
- Add salt, pepper and desired herbs to taste. Dill, garlic, or even cheese can add great flavor!
