Little Red Maine Potatoes


8 small red Maine potatoes (baby reds)
1 stick butter, melted
¼ cup chopped parsley
1 teaspoon sat
Salt and pepper to taste


  1. Wash potatoes and peel just a ring around the center, leaving the peel at both ends. 
  2. Place in pot and cover with cold water and 1 tsp salt. 
  3. Bring to a boil and cook for 30 minutes. Drain. 
  4. Add melted butter and chopped parsley. Salt and pepper to taste.
