Little Red Maine Potatoes
8 small red Maine potatoes (baby reds)
1 stick butter, melted
¼ cup chopped parsley
1 teaspoon sat
Salt and pepper to taste
- Wash potatoes and peel just a ring around the center, leaving the peel at both ends.
- Place in pot and cover with cold water and 1 tsp salt.
- Bring to a boil and cook for 30 minutes. Drain.
- Add melted butter and chopped parsley. Salt and pepper to taste.
