Maine Mashed Potato Breakfast Cakes
1 1/2 cups cold leftover mashed Maine potatoes
4 slices cooked, crispy bacon, crumbled
½ cup shredded cheese
¼ cup finely diced onion, green pepper, whatever you have on hand
½ cup seasoned bread crumbs
1 egg, slightly beaten
2 tablespoons butter
2 tablespoons oil
- Mix first four ingredients together and form into 2-inch round patties. Continue this until all the potatoes are used up.
- Refrigerate for at least 15 minutes to firm up the patties. You may make these the night before and refrigerate until ready to cook the next morning.
- Heat the butter and oil in a skillet; sauté the patties over medium heat until browned on both sides. Serve with toast or english muffins.
