Maine Mashed Potato Breakfast Cakes


1 1/2  cups cold leftover mashed Maine potatoes
4 slices cooked, crispy bacon, crumbled
½ cup shredded cheese
¼ cup finely diced onion, green pepper, whatever you have on hand
½ cup seasoned bread crumbs
1 egg, slightly beaten
2 tablespoons butter
2 tablespoons oil


  1. Mix first four ingredients together and form into 2-inch round patties. Continue this until all the potatoes are used up. 
  2. Refrigerate for at least 15 minutes to firm up the patties. You may make these the night before and refrigerate until ready to cook the next morning. 
  3. Heat the butter and oil in a skillet; sauté the patties over medium heat until browned on both sides. Serve with toast or english muffins.
